MAÎTRE RESTAURATEUR

The title of "Maître Restaurateur" is the only one to be awarded by the French State

to gastronomy. The Maître Restaurateur is a professional gastronomer

of recognized experience. He commits himself to prepare his meals

in his establishment, on the basis of mostly fresh raw products

or such of short channel of supply.

The title of  "Maître Restaurateur" is awarded by the Prefect

after a monitoring audit. The gastronomer Maître Restaurateur

undergoes this examination voluntarily every four years.
